What Is A2 Protein? The Science Behind the Healthiest Ghee

Let's Start Simple

Every time you drink milk or eat ghee — you are consuming proteins.

One of the most important proteins in cow's milk is called Beta-Casein.

Beta-Casein comes in two types:

  • A1 Beta-Casein — found in most commercial dairy today
  • A2 Beta-Casein — found in pure Desi cows like the Gir cow

That one difference changes everything about how your body responds to dairy.

Where Does the Difference Come From?

Thousands of years ago — all cows produced only A2 milk.

Then a genetic mutation occurred in European cattle breeds — around 8,000 years ago. This mutation changed one amino acid in the Beta-Casein protein chain:

  • Position 67 of the protein changed from Proline (A2) to Histidine (A1)
  • European breeds like Holstein-Friesian and Jersey inherited this mutation
  • Indian Desi breeds like Gir, Sahiwal, and Rathi never mutated — they still carry pure A2

Indian cows never changed. Foreign breeds did.

A1 vs A2 — What Happens Inside Your Body

This is where it gets important:

When You Digest A1 Milk:

  • The histidine bond breaks easily during digestion
  • Releases a peptide called BCM-7 (Beta-Casomorphin-7)
  • BCM-7 is an opioid-like compound — it enters your bloodstream
  • Linked to bloating, inflammation, gut discomfort, and more

When You Digest A2 Milk:

  • The proline bond is much stronger — does not break easily
  • BCM-7 is NOT released
  • Digestion is smooth, clean, and comfortable
  • Your body absorbs the nutrition without the side effects

What Is BCM-7 and Why Is It a Problem?

BCM-7 (Beta-Casomorphin-7) is the key villain in A1 milk:

BCM-7 Effect What Research Says
Digestive discomfort Linked to bloating, IBS, loose stools
Inflammation Triggers inflammatory responses in the gut
Type 1 Diabetes risk Some studies link early A1 exposure in children
Heart health Associated with increased oxidation of LDL cholesterol
Neurological effects Opioid-like activity — may affect brain function

European Journal of Clinical Nutrition (2014) confirmed: People consuming A1 milk had significantly more digestive issues than those on A2 milk — even without lactose intolerance.

A2 milk produced none of these effects.

A1 vs A2 — Quick Science Summary

A1 Beta-Casein A2 Beta-Casein
Found in Jersey, HF, cross-bred cows Desi Gir, Sahiwal, Rathi cows
Amino acid at position 67 Histidine Proline
BCM-7 released ✅ Yes ❌ No
Gut impact Bloating, discomfort Smooth, gentle
Inflammation Can trigger Does not trigger
Digestibility Harder Much easier
Ayurvedic recognition Not recognised Sacred — highest grade

Which Cows Give A2 Milk?

Indian Desi breeds — always A2:

  • 🐄 Gir
  • 🐄 Sahiwal
  • 🐄 Rathi
  • 🐄 Tharparkar
  • 🐄 Kankrej
  • 🐃 Desi Buffalo (Murrah, Surti)

Foreign / Cross-bred breeds — mostly A1:

  • ❌ Holstein-Friesian (HF)
  • ❌ Jersey
  • ❌ Cross-bred hybrids used in commercial dairy

90% of commercial milk in India today comes from A1 cows.

Why A2 Protein Matters Specifically in Ghee

Ghee is made from milk — so the protein quality of the milk directly impacts the ghee:

  • A2 milk → A2 curd → A2 butter → A2 Ghee
  • A1 milk → A1 curd → A1 butter → A1 Ghee

Even though ghee contains very little protein after clarification — the fat quality, nutrient profile, and digestibility are all shaped by whether the source milk was A1 or A2.

A2 Bilona Ghee is simply cleaner, richer, and more bioavailable than any A1 ghee.

Signs You May Be Consuming A1 Dairy

Do you experience any of these after eating regular ghee or milk?

  • 🤔 Bloating or gas after dairy
  • 🤔 Heaviness or discomfort after meals
  • 🤔 Frequent acidity or indigestion
  • 🤔 Skin breakouts after dairy
  • 🤔 Low energy after eating

These could be A1 reactions — not lactose intolerance.

Millions of people who think they are lactose intolerant are actually reacting to BCM-7 from A1 milk — and feel completely fine on A2 dairy.
