Ghee Roasted Vegetables ā The Healthiest Way to Eat Your Veggies
Crispy edges. Caramelised centres. A golden finish that only pure A2 Ghee can give.
Why Roast Vegetables in Ghee?
Most people roast vegetables in olive oil or refined oil. Here is why A2 Ghee is far better:
- š„ Smoke point of ~250°C ā stable at high oven temperatures, no toxic breakdown
- š Caramelises vegetables beautifully ā richer colour and deeper flavour than any oil
- š Fat-soluble vitamins in vegetables (A, D, E, K) absorb only with fat ā ghee maximises this
- š° Adds a natural nutty aroma ā no artificial flavour needed
- ā Zero trans fats ā even at high roasting temperatures
Refined oils oxidise and form harmful compounds at roasting temperatures. Ghee never does.
Ingredients (Serves 4)
Vegetables:
- 1 cup sweet potato ā cubed
- 1 cup broccoli florets
- 1 cup carrots ā sliced diagonally
- 1 cup bell peppers ā chopped
- 1 cup zucchini or raw banana ā cubed
Ghee Marinade:
- 3 tbsp Afforise A2 Gir Cow Ghee
- 1 tsp cumin powder
- ½ tsp coriander powder
- ½ tsp turmeric powder
- ½ tsp red chilli powder or paprika
- ½ tsp freshly ground black pepper
- 1 tsp salt
To Finish:
- 1 tbsp Afforise A2 Gir Cow Ghee ā finishing drizzle
- 1 tbsp lemon juice
- Fresh coriander for garnish
How to Make It
Step 1 ā Preheat the Oven Preheat to 200°C (400°F). Line a baking tray with parchment paper. Cut all vegetables into similar-sized pieces for even roasting. Pat them dry ā moisture is the enemy of crispiness.
Step 2 ā Make the Ghee Marinade Gently warm 3 tbsp of Afforise A2 Ghee until just melted. Mix in cumin, coriander, turmeric, chilli, black pepper, and salt. Stir into a fragrant golden marinade. Smell it ā that is what your vegetables are about to become.
Step 3 ā Coat the Vegetables Add all vegetables into a large bowl. Pour the ghee marinade over them. Toss well until every piece is evenly coated and glistening. Every vegetable should shine.
Step 4 ā Roast Spread in a single layer on the baking tray ā do not overcrowd. Crowded vegetables steam instead of roast. Roast at 200°C for 25ā30 minutes. Flip once at the halfway mark. Roast until edges are crispy and caramelised.
Step 5 ā Finish and Serve Remove from oven. Squeeze fresh lemon juice over the top. Drizzle 1 tbsp of Afforise A2 Ghee over the hot vegetables ā this finishing drizzle adds a fresh richness that transforms the dish. Garnish with fresh coriander. Serve immediately.
Tips for Perfect Ghee Roasted Vegetables
- š Dry the vegetables completely before coating ā wet vegetables will not crisp
- š Single layer only ā never stack or crowd the tray
- š Do not skip the finishing drizzle ā it adds a fresh ghee richness after cooking
- š Flip only once ā too much turning breaks the caramelisation
- š Adjust spices freely ā this recipe is a base, make it your own
- š Serve hot ā ghee roasted vegetables are best straight from the oven
