Ingredients (Serves 4)
- 2 cups basmati rice β washed and soaked 20 minutes
- 4 tbsp Afforise A2 Gir Cow Ghee
- 3.5 cups water
- 2 onions β thinly sliced
- ΒΌ cup whole cashews
- 2 tbsp raisins (optional)
- 2 bay leaves
- 4 cloves
- 3 cardamom pods
- 1 cinnamon stick
- 1 tsp cumin seeds
- Salt to taste
How to Make It
Step 1 β Soak the Rice Wash the rice thoroughly until the water runs clear. Soak for 20 minutes. Drain completely before cooking.
Step 2 β Fry the Onions Heat 4 tbsp of Afforise Ghee in a heavy-bottomed pan on medium flame. Add the sliced onions and fry until deep golden and crispy. Remove half and keep aside for garnishing.
Step 3 β Toast the Nuts In the same ghee β fry the cashews and raisins until golden. Remove and keep aside.
Step 4 β Bloom the Spices Add the bay leaves, cloves, cardamom, cinnamon, and cumin to the ghee. Let them sizzle and bloom for 30 seconds until the aroma fills the kitchen.
Step 5 β Toast the Rice Add the drained rice to the pan. Gently stir for 2 minutes until every grain is coated in ghee and spices. This step is what gives ghee rice its signature flavour.
Step 6 β Cook Add 3.5 cups of water and salt. Stir once. Bring to a boil then reduce to the lowest flame. Cover tightly and cook for 18 minutes until all water is absorbed.
Step 7 β Rest and Serve Turn off the flame. Let the rice rest covered for 5 minutes. Fluff gently with a fork. Top with reserved fried onions, cashews, and a final drizzle of Afforise A2 Ghee before serving.
