Ingredients (Serves 4)
- 1 cup basmati or short grain rice
- ½ cup yellow moong dal (split)

- 4 cups water
- 1 onion — finely chopped
- 1 tomato — chopped
- 1 tsp ginger — grated
- 1 tsp cumin seeds

- ½ tsp turmeric powder
- 1 pinch asafoetida (hing)
- Salt to taste
How to Make It
Step 1 — Wash and Soak Wash rice and moong dal together until water runs clear. Soak for 15–20 minutes and drain.
Step 2 — Make the Tadka Heat 4 tbsp of Afforise A2 Ghee in a pressure cooker or heavy pot on medium flame. Add mustard seeds — let them pop. Add cumin seeds, a pinch of hing, and grated ginger. Sauté for 30 seconds until fragrant and sizzling.
Step 3 — Build the Base Add chopped onion. Cook for 3 minutes until soft. Add tomato and turmeric. Cook another 2 minutes until tomatoes soften and the mixture turns golden.
Step 4 — Add Rice and Dal Add the soaked and drained rice and moong dal. Stir for 1 minute to coat everything in the ghee and spices. This step builds deep flavour.
Step 5 — Cook Add 4 cups of water and salt.
- Pressure cooker: Cook for 3 whistles on medium flame
- Open pot: Cover and simmer on low flame for 25–30 minutes until soft and porridge-like
Step 6 — The Final Touch Let pressure release naturally for 5 minutes. Open and stir gently — khichdi should be soft, slightly runny, and golden. Now pour 2 tbsp of Afforise A2 Ghee generously on top. Let it pool and melt on the surface before serving. Do not mix it in — let everyone see it.
